I love the aroma and smell of the coffee, but I can’t really drink it. Perhaps my body is not very used to caffeine, every time I had too much coffee or caffeine, my body will react strangely. Sometimes a headache, sometimes maybe acid reflux from my stomach. That’s why I try to avoid drinking coffee.
Though Mr 197 used to be a complete opposite. Originated from Greece, where they have a strong coffee culture, he loves drinking frappe when I first met him. He could drink a few glasses every day, not to say he can drink it in the evening and still go to bed properly. So it’s like his body already creates some immunity toward caffeine. These few years due to health reasons, he decided to give it up. Not the easiest thing in the beginning, but I am impressed that he did it.
So after all this talk, we decided to make a few muffins with the coffee flavor. It’s not very strong coffee, but it’s full of coffee aroma. We added some chocolate chips to upgrade it. Coffee and chocolate are really good matches. Like some other muffins recipe that we share, I like that this recipe is not making too many muffins in one go. If you would like to make more because you are having a party, you can just do some maths and double the recipe up (just use an egg as a unit, 1 egg makes 6 muffins, 2 eggs make 12, and so on.) The muffins make from this recipe are soft and moist, also not too sweet. That’s how we like our muffins to be.

Coffee Chocolate Muffin
Ingredients
- 110 g All-purpose Flour
- 35 g White Sugar
- 35 g Brown Sugar
- 1 Egg Large
- 70 g Butter soften
- 7 g Instant Coffee
- 2 g Baking Powder
- 35 g Milk Chocolate Plus more for toppings
- 24 ml Milk
- Pinch of Salt
Instructions
- In a double boiler, melt the chocolate, instant coffee and milk together.
- Preheat the oven to 170 degrees.
- Sieve the flour, baking powder, and salt in a bowl. Mix well.
- Mix softened butter with both white and brown sugar.
- Beat the egg separately, and add it to the butter mixture in 3 times. Mix well after each addition.
- Add flour mixture and melted chocolate to the butter-egg mixture bit by bit. Mix well after each addition.
- Add extra chunks of chocolate if you prefer.
- Put the mixture evenly to 6 muffin tins.
- Bake in the oven for 15-20 mins until a skewer came out clean.
