Because of covid-19, we stayed home most of the time. We go to the supermarket every 7-10 days and get everything we need until we run out of fresh food again. We still have some vegetables in our fridge, and we need to start finishing it before they turn bad. So why not making this classic french vegetarian recipe? It’s actually not that difficult to make but just need some chopping time and have the patience to line up the cut vegetables nicely.

Since we are making this for two people only, we don’t want to make too much. If you have a big family, you definitely can scale this up easily. Just keep taking turns when you are lining up the vegetables. These are also the vegetables we have at home at that time. It’s also quite common to use squash for this dish too. This is such a beautiful dish to make and also healthy for the body. Definitely something we would make it again when we would like to have a healthy easy meal!

Ratatouille

Classic French Vegetarian Dish

Ingredients

  • 1 Zucchini
  • 1 Aubergine
  • 2 Red onion
  • 2 Tomato
  • 350 g Tomato Sauce
  • 2 cloves Garlic
  • Drizzle of Olive Oil minced
  • 2 tbsp Fresh Basil chopped in small pieces
  • Pinch of Salt
  • Pinch of Black Peppers

Instructions

  • Preheat the oven to 180 degrees Celcius.
  • Slice zucchini, aubergine, onion, and tomato to 0.5cm.
  • Mix the tomato sauce, garlic, fresh basil, and salt. Put the sauce in the bottom of the oven container.
  • Line them up in alternating order and nicely on the tomato sauce. If you have more vegetables or a smaller container, you can put them more tightly together.
  • Drizzle some olive oil on top and add a pinch of black pepper.
  • When the oven is at the expected temperature, put it in the oven and cook for 35 mins.
  • Once the time is up, it's ready to serve.
