Red and white, in my opinion, are the symbolic festive colors of Christmas! And that’s why we decided to make some muffins with cranberries and white chocolate!

This muffin may not be the healthiest recipe, but it’s Christmas time! Who cares? Let’s enjoy ourselves and indulge in some delicious sweets!

This recipe is especially great with the crumbles on top! Crispy and tasty! But of course, if you want to cut down some calories, you can also skip that part! (Though it’s really delish and we will ask you to think twice!)

We only make 6 because we are a household of two only. But feel free to double the recipes to make more and share with your friends and families! I’m sure everyone will love these muffins! (And your home will smell sooo great!)

Cranberry White Chocolate Crumbles Muffins

Our Christmas muffin for this year! Cranberries and white chocolate are the best combinations! With some extra crumbles on top - Perfect!

Ingredients

Muffin

  • 100 g All-purpose Flour
  • 2 g Baking Powder
  • 1 Egg
  • 30 g White Sugar
  • 65 g Butter softened
  • 30 g White Chocolate
  • 20 mL Milk
  • 15 g Cranberries
  • 20 g White Chocolate chopped

Streusel/Crumbles

  • 30 g Butter cold
  • 30 g White Sugar
  • 45 g All-purpose Flour

Instructions

  • Preheat the oven to 180°C.
  • Sieve 100g flour with baking powder.
  • Melt 30g white chocolate with 20mL of milk in a hot water bath. Stir occasionally until combines.
  • In a separate bowl, put the softened butter in. Add 30g of white sugar, mix well. Beat an egg in it. and mix well.
  • Add 2 tablespoons of the flour mix to the butter mix. Mix until just combined. Then add ⅓ of the chocolate mix, mix well. Keep repeating until all the 3 mixtures combined.
  • Fold in the cranberries and chopped white chocolate.
  • Split them into a muffin tin equally into six portions.

Streusel/Crumble

  • Add sugar and flour to the cold butter.
  • Use the fingers to rub the flour and sugar in the butter, until it looks like the sand texture.

Bake the muffins

  • Add the streusel on top of the muffin mix.
  • Bake for 15 mins until a skewer comes out clean.
