About two weeks ago, I was in a cafe and saw some Lemon Chocolate Muffins. They looked really yummy but I thought it shouldn’t be too hard to make and I wanted to make some myself. So I looked for recipes online, but I couldn’t find many that actually look good. (I want to make something that is delicious and looks great.)
In the end, I chose this recipe which requires ‘lemon curd’ but it looks awesome. (The finishing product reminds me the skin of giraffe, so I called them ‘Giraffe Muffins’.) ‘Lemon curd’ is totally a new phrase in my dictionary. I have no idea what it is, and not sure where we can find it in Germany. I googled it, and the internet claimed it’s not too difficult to make it. So I decided to make it myself. If you can find the already made one, feel free to use it. (I later find it in a supermarket called ‘Edeka’, perhaps it will also be available in normal supermarket, around the jam session.)

Make 12 muffins
Preparation time: 30mins (excluding the time to make lemon curd)
Baking time: 18 mins
Ingredients:
- 100 g melted butter
- 150 g yogurt
- 2 eggs
- 45 mL milk
- 250 g all purposed flour
- 10 g baking powder
- 5 g baking soda
- 100 g white chocolate chips
- Zest of 1 lemon
- 50 g lemon curd (Recipe at the bottom)
