Pancakes are one of our favorite breakfast choices for Sunday. There are so many different kinds of pancakes, from the thin French crepes, to the thick fluffy American ones, and also the little bit fluffy and sweeter Japanese ones.
We have been trying different pancakes recipes that we found online, and agree that the following one is the best that we had so far without using buttermilk. (The best one I ever made was with buttermilk, but since I don’t always buy buttermilk, this is the best hotcake without it!)
By the way, ‘fluffy’ is the latest vocabulary we like among my colleagues. So I just want to say it one last time, this pancake is really FLUFFFFFFFY and delicious!
Make 8 Hotcakes
Preparation time: 15mins
Cooking time: 20 mins (Also depends if you cooked them 1 by 1, or a few together at the same time)
Ingredients:
- 200 mL Milk
- 200 g All-purpose flour
- 16 g Vanilla sugar (Alternatively, use caster sugar and add vanilla essence)
- 2 Large Eggs
- 8 g Baking powder
- Pinch of salt
- Butter (To brush the pan)
1. Prepare the dry ingredients
Put flour, baking powder, vanilla sugar and salt in a bowl, mix well.
2. Mix the wet ingredients with an electric or hand mixer
Whisk the eggs and put the milk in a mixing bowl, and beat until foamy, about 3 mins. The mixture will raise quite a lot, so make sure to use a bigger mixing bowl.
3. Mix dry and wet ingredients together
Quickly but gently mix all the dried ingredients to the wet ingredients.
4. Wait for 15 mins
Let the batter sit for at least 15-20 mins. The batter will get thicker.
5. Turn the heat up and fry the hotcakes
Brush some butter on the saucepan. Heat up the saucepan with medium-high heat. When the butter starts bubbling, put 1 big spoon of batter there which creates a diameter of ~10 cm. When the batter starts having bubbles – and bubbles are popping, keep a close eye on them and wait for more to pop. Flip it when you can see the surface is not wet anymore, like when you move it, there won’t be any liquid moving, e it may take around 2 mins. Cook the other side for another minute. Continue with the rest of the batter. Don’t forget to gradually lower the heat of the stove to avoid burning the hotcakes!
6. Time to serve
Serve right after when it is ready. Top with maple syrup, fruits, whipped cream, nutella…etc.!
